How Often To Clean

But there are recommendations that restaurant owners and managers can follow when trying to determine how frequently to have kitchen hoods, fans and ducts cleaned by a professional.
Restaurant kitchen systems should be cleaned at least every six months, he said. Commercial establishments that use deep fat fryers and/or charbroilers should clean these systems every three months at a minimum.
The same goes for restaurants that use a great deal vegetable oils in their cooking processes- they need to schedule cleanings every three months. When vegetable oil grease is allowed to accumulate, it becomes “glue-like” and removing it is a difficult task.
Restaurants that use wood fires or smokehouses should have their systems cleaned at least every month.
