It’s the most wonderful time of the year, and of course we mean that cookie season. Although I love cookies all year round, they are especially delicious at this time of year, and I always like to add a new candy to my friends and neighbors to add to my cookie boxes. As obsessed as I was my slices and baked cookies since last year, I’ve been eager to make a chocolate-filled cookie that would satisfy the cocoa sweetness. Place the baked chocolate hazelnut cookies in a muffin bowl. Yes, you read that right!
As usual, I started testing the recipes and along the way, I experimented with different proportions and combinations. Although the chocolate tasted good, these cookies only distinguished the texture when I baked them in a muffin bowl. So be real to me with you, I’m taking some liberties here on what the definition of a cookie really is. These chocolate candies live between a brownie and a cookie. They have a nice chewy exterior that I really like from the good chocolate chip cookies, with a sweet interior and a little cake, which is very brownie-like.
The icing on top of my chocolate asked my dad if I was making cupcakes, which added an extra layer of conversation to my cookie box. After much thought, here is what I will say: these are very good. You won’t be able to eat a single one, and recipients at your holiday cookie box will appreciate it.
If you’ve never baked cookies in a muffin bowl, let me enlighten you. Many of you will remember the madness of the cookie cup when baking chocolate chip cookies in the oven and filling with milk, this time I didn’t necessarily want to go the cup way. But if you really wanted to, you could. Strange as it may seem, using a muffin tin provides more heat to touch the egg in a tray than in the oven. This also means chewing edges always my favorite part of any cookie. From now on you bet that I will look to burn all my future cookie recipes in muffin tins.
Now let’s talk about taste. These are personified chocolates. Very rich chocolate flavor and enhanced on top. My inspiration? The Ferrero Rocher hazelnut sweet chocolate that is usually given at this time of year. It’s an iconic flavor combination that seemed like just smoking a cookie in honor of the holiday classic.
In order not to make things too sweet, I added extra salt to the sweet and sour frosting. You need a little salty to tone the saccharin, and the chocolate flavor stands out. If you want more, add a Ferrero Rocher chocolate on top of the cookies.
