Full disclosure: I’m an avid fan of funfetti cakes. Usually the super sugary cakes I buy at the kids’ birthday party store aren’t so tempting, but when the funfetti is included in the picture? Resistance is useless. Of course because we all need a little more fun (fetti) in our lives, I came up with a way to enjoy these rainbow flavors. holiday season together (prepare for it) Christmas tree-shaped marshmallows! Well, you can make the shape you want, but the trees are pretty perfect, don’t you think? Have you ever made homemade marshmallows? These are pretty new things to me, but I’m really wondering why it took me so long to get on the train because they’re so easy. You will be freaked out when you see how simple a combination is gelatin, sugar and in corn syrup it is combined to do something this smooth and delicious. Pure magic, I tell you.

It’s a good thing to make a lot of this recipe because you want to put these into steamed cocoa cups. every night at least once a week and pack them in nice little bags to give to all your lucky friends.

When you master this basic recipe, go crazy mixing flavors! Add a little cocoa powder to make these chocolates, change the grated candy canes for splashes of funfetti, or try the orange or almond extract instead of mint.
