In terms of Australian food, Bill Granger is considered an icon. Its restaurants are legendary with a group dining room (it was one of the first to create a space that encouraged strangers to sit at a table) and a simple and honest style of cooking. I will never forget the first time I ate the same Darlinghurst Restaurant. I was probably about 10 years old or when my uncle took me to breakfast. We asked for “soldiers” for soft-boiled eggs and toast and it was the sweetest thing I’ve ever had. The restaurant also has a nice atmosphere. Over the years, Granger has been named “Sydney’s Egg Master” (New York Times 2002), “King of Breakfast” (Telegraph Magazine, 2016), and ‘the creator of the avocado toast’. Now, it’s always my first stop when I return to Sydney.

So, of course, when I saw Mr. Granger release his latest cookbook, Australian food I knew I had to get my hands on it. The skin alone was enough to buy the tomo (a sunny addition to my table), but the recipes are on a different level: fresh flavors with a focus on local and seasonal, and healthy but never predicated. In honor of the presentation, we’ll be releasing some of her latest title recipes, the first with her baked green egg with roasted tomatoes and sweet chili sauce.

Granger calls these baked eggs an “organized animator’s dream.” He added: “I always think I will be an‘ organized animator ’but I can never be that person. If there’s ever a chance to organize, I get too enthusiastic and add something else to the equation, causing chaos. All you need here is a baking tray with lots of small dishes.
