Growing up, the second time it dropped below 70 degrees (this is Texas, everyone), my mom would light a fire, light a chili pepper, and call it winter. I’ll be honest, this week my brain was a little confused to see “December” and “77 degrees” in the same sentence, but the rest of me is ready to get out of the crockpot and make some winter food recipes.
There’s just something about saving for the day, the weather, and the holidays that make me feel like having a relaxing meal at home. Every time the clock strikes five and the sun goes down I am ready to fill my kitchen with the sweet smells of the season. Of course, winter is also a pleasant time of year, so my goal has been to keep track of the recipes that bring the comfort I want, along with all the nutrients my body requires. As you can see, it is not very difficult for comfort and conscious eating to be together. We’ve found and completed a list of healthy winter food recipes (ish) that will keep your stomach and soul full throughout the season.

Minimalist Baker’s Butternut Squash Lasagna
Why we love: This winter food recipe uses one of my favorite winter vegetables, pumpkin. I honestly love all pumpkins, but this recipe can make a cake with its creamy pumpkin / anaardo sauce. It is plant-based, easily made gluten-free and will warm the stomach and soul on a cold winter night.
Hero component: Butternut squash, of course.
Black beans and sweet potato vegetarian chili
Why we love: This sweet potato and this black bean are on Camille’s delicious list when he has to give dinner to a friend who is sick or has just had a baby, which is a time of comfort. It is packed with rich black beans, tasty vegetables and plenty of spices (plus all these superfoods) so no one will lose their meat.

Why we love: Pad Thai has always been a recipe for my winter comfort food. As well as being warm and sweet, it is very easy to prepare. I used to eat only Pad Thai and now it has become one of my favorite dishes. This recipe is especially simple, can be easily customized to suit your preferences or needs and is ready in 30 minutes.
Hero component: This may be lame, but my favorite part about Pad Thai is the lime and chopped peanuts.

Why we love: Teighan made this recipe for us when he visited us in Austin, and I’ve been dreaming about it ever since. This silky, smooth, creamy vodka pesto paste is a comfortable winter recipe we all need. Fresh pasta sprinkled with tomato pesto vodka in a sweet sauce? Yes please! We love this recipe not only for its simplicity and sweetness, but also the beautiful red and green colors that feel down.
Hero component: Pesto is the secret of this sauce.
Eggplant lasagna pan
Why we love: This eggplant lasagna pan is a comfortable dinner for cold nights. Camille has been on a plant-based diet this month, and I think this recipe is worth it. Basically, it’s a simpler and lighter way to enjoy all the sweet flavors of lasagna. He is also a vegetarian.

Chipotle Potato Sweet Tacos Crispy with Semi-Bake Harle Lime Cream
Why we love: Sometimes it’s no more comfortable than a delicious taco dinner, especially when it’s hot, crunchy, and spicy. This vegetarian and gluten-free recipe will be your favorite after a single snack and get bonus points for being healthy. Adding taco seasonings to potatoes is a complete change.

Why we love: Baked pasta dishes are one of those recipes for comfortable winter food that will never age. Specifically, this recipe in a creamy white sauce with shells stuffed with spinach and ricotta doesn’t let me overheat. This vegetarian meal is perfect when you need to make it entertaining beforehand.

Why we love: If you haven’t tried Spaghetti alla Puttanesca, it’s a red sauce pasta that uses the salt and flavors of olives and capers. I personally don’t like olives, but I like capers, and this recipe is still my favorite. This version uses zucchini noodles, which is an easy way to take a comfort food recipe and make it a little healthier (and gluten-free). If you like spices, don’t underestimate the flakes of red peppers.

Why we love: One of the best parts of winter is coming home and warming up with a large bowl of chilli. Why we love: You have to take advantage of the winter pumpkin, folks. This vegan and gluten-free recipe meal is very comfortable and hearty, though healthy. While chickpeas add protein, you can also add grated chicken or play with the vegetables you add. Tip: If you smoke acorn squash beforehand, add the rest for 10 minutes.

Slow Cooking Healthy Maven Bittersweet Chicken
Why we love: Skip this week’s take away and try this sweet and sour chicken recipe. It is easily prepared in a pot and each snack explodes with sweet and salty flavors. As it mixes broccoli, pepper and more, it is a complete meal when served with rice.
Hero component: Coconut amino acids (a gluten-free alternative to soy sauce) amaze me every time.
A pinch of Yum chicken quinoa and a creamy broccoli casserole
Why we love: This recipe is described as “real food meets comfortable food” and I couldn’t have said it better. Pots sometimes have a bad representation, but this one has all the sweet ingredients and has no stigma. I mean, what’s wrong with quinoa, chicken, bacon and broccoli overflowing with your favorite cheese? I find it comforting.
Hero component: Broccoli gives a perfect touch of color and vegetables.
