But there is another super one summer component it would be a pity to forget — pesto! Basil is as summery as summer and, although a great pesto made all year round can be obtained, in the warmer months there is no such thing as the simplest meal like freshly mixed pesto. How to make pesto

We are big fans Foodie Crush traditional basil pesto recipe. The food processor makes it very easy to make, but the secret lies in the proportions. Adding too much garlic or enough olive oil is a recipe for disaster, so be sure to consider your precautions!

You will need:

  • 1/2 cup toasted pine nuts
  • 1/2 cup freshly grated parmesan cheese
  • 1 garlic cloves, roughly chopped
  • 2 cups fresh basil leaves wash, peel and finely pack
  • 1/2 cup olive oil
  • 1/2 lemon juice
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly milled black pepper

Add the garlic, toasted pine nuts and parmesan cheese to the food processor and process until smooth. Then add the fresh basil leaves and reduce the pulse.

While the processor is running, slowly pour the olive oil down the channel until the mixture is emulsified and smoothed.

Season with kosher salt, lemon juice and press again. Taste it and then adjust it to your liking.

Pro tip: eat pesto immediately or store in a closed container for a week. If you store it for later use, pour a large amount of olive oil over the pesto to form an oily seal. It will prevent the pest from darkening. Mix the oil in the sauce before use.
