If you ate only one type of food in your lifetime, what would it be? Although some of me think I can eat pizza to my heart’s content every day, I’m not sure if that would be helpful to my health goals. These mushroom and black bean tacos are easy to make for a large group, you just have to duplicate all your ingredients and put on toppings for people to taste their tacos. However, when I do these for more than four people, I shape my process in two small but important ways:
- Saute the mushrooms in two batches. When preparing mushrooms, it is important not to overflow the pan. You want to put each mushroom in direct contact with the pan and get a crispy roll, instead of putting it together and putting it in the “steam”. So I give this step a little more time: after sautéing the first batch, I take it to a plate while the second batch is cooking, and then I add it to the pan to keep it warm until it’s time to serve.
