Five years ago, Sarah Thomas – a sommelier at one of New York’s best restaurants – quit her job to launch a children’s platform. Kalamata’s kitchen, videos, travel guides and new book. His goal? “I want to teach children empathy and an open attitude by learning from other cultures through food.” Here, Sara shares two products that changed her secret confidence, the look of her wedding and her skin …
You said that your childhood helped shape your work. Where did you grow up?
My parents are both from southern India, and I was born and raised in the Pennsylvania countryside. Our small town was not the most welcoming or diverse place for children to grow up to look like me: big hair, big eyebrows, sideburns. My mother prepared school meals and my classmates made fun of the smell. And I was like me, Ugh, I don’t want to eat, I’m going to try to get a Slim Jim.
It must have felt so confused.
I remember feeling uncomfortable on my skin. It took me many, many years to celebrate the things that make me happy. As a child I never felt pretty; I was never going anywhere. I was born and raised here, I wasn’t entirely Indian, but people didn’t consider me completely American.
How has this affected your work today?
Today, we have a role to play in encouraging children to discover the world through food adventures. We do this through an adorable character, Kalamata, and its full alligator, Al Dente. It was important for me to represent Kalamata in his own way because I remember feeling from a young age because of the things that I felt as a child now that are completely wonderful and special. And I never want a child to feel that way.
That’s amazing.
The words they live by are the words of Taste Buds Pledge: “I promise to open my head and fork each food at least twice and share what is on my plate when others don’t have enough.” Different is delicious, unknown is adventure.
Did you create it, somehow, for your childhood?
If characters like Kalamata had existed as children, who knows what confidence I could have? This character would also affect the white children I grew up with – to see a girl who didn’t look like them become a leader, to become an inspiration. People ask me if I’m Kalamata, and I always say, she’s a girl I would love to be. She owns her big hair! He embraces it with negligent abandonment! He shakes his eyebrows and shakes his cheeks.
How to take care of your hair today?
When I was a kid, my mother used to periodically remove her hair with olive oil, but I recently tried it Shaz and Kiks scalp + Hair Prewash and I love it. Neem comb it’s great. What do you love about that?
Women in South India have thick hair and a lot of it. When you’re a teenager with hair on your face, people won’t let you slip; I was teased all the time. I begged my mother to let me do something with my face. The two old cousins eventually took matters into their own hands. These were, ‘Hey, Sarah, go upstairs’, and they hit my eyebrows with tweezers. It was weird but I was so grateful. Now I thread them, and it looks like an aunt community. They give me a lot of unsolicited advice and comments about whether I took the necklaces and the weight. I love. It is very popular.
Tell us about your wedding makeup.
It was the most makeup I’ve ever worn in my entire life! I was glad I did, are you sure this isn’t going to look bad? It was fun to dress up like that. It’s the most fascinating thing I’ve ever felt.
Your hair?
I knew the rest would look great, so I wanted my hair to be simple. My mother had a simple cake at her wedding, so I went with it.
And your henna was beautiful!
Doing great Indian wedding things was very important for my mother. He planned everything. I didn’t know what to do, and it was him, I got it. The henna ceremony was a happy and fun atmosphere with all these women I loved in a room. Later, my book illustrator Jo Edwards saw the photos and liked it, would it be weird to include some these models in our book?
What was it like to be a sommelier? I’ve always been curious.
After finishing my undergraduate studies, I was burned. I have to do something non-academic. It occurred to me that I was going to be a bartender.
How did you get into the wine, exactly?
Well, as I am addicted to learning, I realized that wine was the most academic part of the industry. So I decided to follow the wine, instead of being a doctor, because my parents welcomed me. The study part was there, the food part was there, the service part was there. Someone else was put on the ladder to have a nice experience; I actually had adrenaline every night. I became a sommelier and ended up at Le Bernardin where I worked for six years. The study curve was very steep from Pennsylvania to a three-star Michelin restaurant in Manhattan. I like to dive into things, but at first I like it when things aren’t easy for me.
Let’s talk about skin care.
I’ve always had confused skin, but over the last couple of years two things have had a big impact: Belarjale Bakuchiol serum and Herbal pencil facial oil. Within two weeks, my skin looked much better. I would look in the mirror and think, my God, my skin looks healthy!

I use Sephora collection is a 12-hour long-wearing liquid eyeliner. A cat’s eye takes 20 seconds. Dark eye eyeliner, for me, gives me a more Indian look and feel.
Any other products you swear by?
Nars Bronzer Casino “I just slipped on my cheek.” My mother has beautiful cheek bones, but my face is like my father’s. So I try to fake the cheek bones.
What little things make you beautiful?
I’ve never left home without earrings. I have a great collection, especially from my mother’s hand. They make me feel connected to my Indian character, even if I just wear jeans and a big T-shirt and Indian earrings.
Do you have a philosophy of beauty?
I want girls with big hair, big eyebrows and big cheeks to just love what they look like and where they feel proud to come from. I hope many children will see themselves Kalamata. I hope it will inspire them throughout their lives.
