Who says ice cream cakes should be brought down to children’s birthday parties? This Spumoni ice cream cake raises my favorite dessert of my childhood to levels I could never have imagined. It is made with layers of brownies mixed with different flavors of ice cream (Pistachio, Black Cherry and Chocolate) and made with fresh cream and cherries. When the host Alison Hersel of Plumcot Farm when I first described this recipe, my mouth immediately started watering. It combines all of my favorite desserts – brownies, ice cream and fresh fruit – in a way that isn’t fabulous. I know it sounds like a lot, but somehow this dessert still manages to be light and cold enough to serve on a summer evening. Also, your guests won’t be able to stop talking about it for days (at least that’s what happened to me!).
