As the mashed potato introduces me, the idea of cauliflower mashed potatoes didn’t bother me. How could that be a real thing? This recipe for fake Parmesan mashed potatoes on the surface of Helene Henderson’s new cookbook, Malibu Farmhouse Sunrise to Sunset, eased all my doubts. They don’t just do it look like mashed potatoes and cheese, they also have their own taste. I tried the cauliflower puree after the cauliflower puree, and there is no other recipe that has the real potato flavor that this one has. The author / chef says Helene Henderson:
“I live with broccoli puree, which is half broccoli and half a potato, but this cauliflower dish is a potato-free break. It can be easily made in advance and put into the oven just before serving. I like to keep the color of this puree white, it looks like a potato, so I boil cauliflower, but you can also burn it, which will make the puree sweeter. ”
