I love summer barbecue as much as the next person. As a vegetarian, I often had to bring my own food or choose random vegetables that people would throw on the grill. Although burgers and hot dogs these days are great plant-based alternatives, I can confirm, I love both Impossible and in addition to the meat offering, I sometimes like to enjoy a delicious and satisfying snack like everyone else. Thinking about options beyond vegetable kebabs, I went back to my favorite at several weddings over the years: paneer tikka kebabs.

Who doesn’t love paneer? Growing up with Paneer in many ways saag paneer one of my favorite creatures – Indian cheese has basically always been basic in my fridge and freezer. Paneer is a non-aqueous cheese with a nice chewy texture and a smooth flavor. While I grew up eating a lot of sabzi, it’s also great on its own.

By itself, paneer doesn’t have a ton of flavor, which is why we get into the marinade. A small mixture of yogurt and a ton of spices come together to marinate the breadcrumbs at night, so that when the snacks are thrown on the grill, the taste is sweet and satisfying. As usual, I recommend using fresh ground spices. It changes the flavor here, so don’t throw it away.

You can also marinate yogurt vegetables for even more flavor. Add the yoghurt and add the number of spices to consider.

To assemble, cover the marinated panera with the peppercorns and onions before grilling and you’re ready. These couldn’t have been easier, and will give all your vegetarian friends something delicious to eat on the grill that won’t leave them hungry or that doesn’t want a “real” entry.

I like to serve these with rice, roasted rotis or naan. Add a little drizzle to the chutney and yogurt, and add a little lime juice to give these snacks an extra kick. It’s the perfect way to celebrate summer.
